A Home Counties mum-of-two is blowing her Instagram followers’ minds with her mouthwatering dishes – ranging from pizza to fish and chips and stir fries – all lovingly created from sponge cake. Part-time university worker Chidinma Chiejina, 34, deserves a masters in illusionism for her astonishing fondant fancies, which take two to three days to make and, according to her family, taste delicious. Fearing that cake making looked “too technical” for her, it took until 2012 for Chidinma to produce her first effort – a sponge coated in buttercream icing – for her university lecturer husband Eric’s birthday.
