Fonio - A New Drought Resistant Superfood From Africa’s Sahel

Fonio is a grain consumed mostly in West Africa. It has been cultivated in the region for more than 5,000 years, making it one of Africa’s oldest grains. It’s light and fluffy, with a nutty flavor, and it’s good for the health of both humans and the planet. Piere Thiam is a Senegal-born, New York based chef who founded the company Yolélé in 2017 to support smallholders in Africa.
